At the UFF 26 Chef’s Table session, Abel Ortiz, founder of Chullschick Group and the chef who has been bringing Peru’s vibrant food culture to Hong Kong since 2014, takes the pass alongside Cristian Encina, the Chilean chef-owner of PICA South American Kitchen in Ubud, which has made ceviche ubiquitous across Bali.

Guests watch up close as the two trace the depth and diversity of South America through a single menu: Abel’s Quinua Drink and Chullschick Ceviche - bright, precise, and rooted in Andean tradition alongside Cristian’s Fish Escabeche Causa, layered, bold, and expressive, reflecting PICA’s role in bringing South American flavours to tables across Bali.

Ceviche brilliance. Andean tubers. Amazonian depth. The biodiversity of Peru on a plate, prepared live and served with the stories behind it.
